Something delicious and refreshing for those of us fainting away in the heat. This is a lovely twist on traditional gazpacho, substituting cucumber for watermelon, with a light fruity kick.
I need every kick I can get these days. Anything that gives me an uplift is welcome and this does the job, for a while at least!
Use the tastiest ripe tomatoes you can find and put it straight in the fridge. Serve it really cold, adding a couple of ice cubes to each glass.
Watermelon Gazpacho
Ingredients
- 600 g ripe tomatoes (about 4/5 medium) peeled and roughly chopped
- 400 g ripe watermelon in chunks – seeds removed
- 1/2 red onion
- 2-3 cloves garlic
- 1 small green pepper
- 2 slices stale bread in rough chunks
- 1/3 cup olive oil
- Up to 1/3 cup wine vinegar
- Salt
- Black pepper
- A spring of mint or basil to garnish
Method
Blend the vegetables, watermelon and bread in a food processor till smooth. Add the olive oil then most of the vinegar and season with salt and black pepper to taste. Allow to chill thoroughly then taste, The full flavour will come out only when the soup is really cold. A few more drops of vinegar or a little more salt might just take it from good to amazing!
We live on cold soups when it gets really hot and avoid any cooking that heats up the kitchen. But even you are not dying of heat, cold summer soups are wonderful. Check out these other Spanish classics: salmorejo and ajo blanco. Both are delicious.

Even I can buy watermelon in the shop here in Oppdal, Norway. But dont have my blender here, since we dont have electricity in our cottage. Going to make this when coming home, to our NEW, midnight-blue kitchen.
