In keeping with the new fresh look of this site I decided to share a lovely fresh lemon cake. It’s one of those recipes that, without fail, people ask for every time I make it. And it’s also a recipe that works no matter if cake making is not your forte, as in my case.
This lemon cake is made in a 10 inch Bundt pan and can be made a couple of days in advance. You can serve it as is or with a lemon cream or ice cream. I find the lemon cream compliments it perfectly.
Lemon Cake

Ingredients
- 1/2 cup (125 ml) butter
- 2 cups (500ml) sugar
- 2 eggs
- 1/4 cup (50ml) plain yoghurt
- Grated rind of two lemons
- 3 cups (750 ml) flour
- 2 tsp (10ml) baking powder
- 1 cup 250ml) low fat milk
Lemon Glaze
- 1/2 cup (125 ml) fresh lemon juice
- 1/2 cup (125ml) sugar. (I use less)
Lemon Cream
- I cup Greek yoghurt
- 1/3 cup granulated sugar
- Grated rind of 1 lemon
- 1 tbs fresh lemon juice
Method
- Take a large bowl and with an electric mixer, beat the sugar and butter till it becomes light and fluffy. Then beat in the eggs, yogurt, and grated lemon rind.
- Mix the flour and baking powder and then beat it into the egg mixture alternately with the milk – three of flour to two of milk.
- Grease and flour the Bundt pan and spoon in the mixture. Bake at 350F /180C for 50 minutes or until a toothpick comes out clean. Let the cake stand inside the pan on a rack for 5 mins.
- To make the glaze, stir the lemon juice and sugar until dissolved. Turn the cake onto a rimmed plate and with the toothpick, poke deep holes into the top of cake. Brush the glaze over the cake letting it soak through. Allow to cool
To make the Lemon Cream simply combine all the ingredients and stir well. Cover and put into the fridge for 30mins or for up to 3 days.

A family favourite ….very similar to one I made the week before we left for Mexico.But I put drizzle icing over the top.
