I’m cooking imam bayaldi and have a question:
What does one do with the slits of aubergine flesh cut away in order to place the stuffing mixture inside them?
Do you cut them up and add them to the chopped mixture?!

Sorry I only just saw this. Basically, you just want to create a small opening so that you have space to stuff the vegetables in. You can throw that sliver of aubergine in the pot which will just add to the sauce.
